Fontainebleau strawberry

ingredients 

For 4 people

400 g of strawberry

300 g white cheese curds

20 cl of full cream

80g icing sugar

50g sugar


preparation

1. Pour the curds into a bowl to drain to. Let it rest and at least 2am.
2. Wash strawberries, remove the stalks and cut them into pieces. Mix half the strawberries with powdered sugar and cut the remaining two strawberries.
3. Beat the fresh cream until completely cool and then add the sugar.
4. Gently fold the whipped cream to the strainer.
5. In bowl, alternate layers of foam strainer, strawberry coulis and strawberry pieces.
6. Leave in the fridge until ready to serve.
